My lifelong passion for chocolate takes center stage at Chocouille. Growing up, I spent much of my childhood in a temple, as my father is a monk. This unique upbringing profoundly shaped my perspective on food and mindfulness.
At temple Jogyesa - in Korea, I had the privilege of learning from buddhist nun Jeong-Kwan, a master of temple cuisine known for her feature on Chef’s Table on NETFLIX. Her classes taught me to approach food with gratitude, balance, and mindfulness—principles that deeply influence my vision for desserts.
To me, chocolate is the most meditative ingredient in the world. Its complexity and richness invite moments of calm and reflection. At Chocouille, I aim to craft chocolate that embodies this mindfulness, blending tradition, creativity, and heartfelt appreciation for this extraordinary ingredient.
